How MCE Drove a Pizza Crust Startup's Success

The Problem

The co-owners of a pizza company were in the early stages, focused on pizza crust production for distribution. The company used the air for the automation line from dough to cut moving cooked dough to the cooling line. The necessary equipment had been acquired for the crust production process, but the system lacked a critical component: the compressor. Faced with a tight budget, the startup company needed a cost-effective solution to handle its current requirements and support future growth. Additionally, the company required a system where the air would come into contact with the pizza crust, necessitating specific considerations for food safety.

The Solution

The company met with MCE who held a comprehensive three-hour meeting to determine the required cubic feet per minute (CFM) for their production line and to discuss potential expansion plans.

After evaluating various options, MCE concluded that an oil-free compressor in the necessary HP size was inefficient. Instead, we proposed:

  • 30 HP compressor with food-grade oil
  • Mikropor dryer
  • 400-gallon dry tank.

This setup was designed to meet their immediate needs and fit within their budget constraints, ensuring the startup could commence production according to their schedule.

The Value

The decision to go with the proposed solution provided significant value to the company. By selecting a 30 HP compressor system, they were able to stay within budget while securing a reliable and efficient compressed air system. The inclusion of food-grade oil ensured compliance with food safety standards, a critical requirement given the air's contact with the pizza crusts.

Additionally, the timely installation of the system allowed them to meet their production deadline, facilitating a smooth startup phase. This strategic investment not only addressed their immediate operational needs but also positioned them for scalable growth, ensuring they could expand their production capacity in the future without incurring substantial additional costs.

Testimonial from the Owner:

"I wanted to express my appreciation for the service and attention we received from MCE.  From the beginning, we acknowledged that this was our first time undertaking a large-scale project like this, and a vendor can take care of you or take advantage of you in that scenario."
